  Mrs. Owl's Recipes       (from Tommy Tortoise)

               

         Blend: 1 cup  soft pitted dates (cut through to avoid                        

                 pits)

                     3/4 cup  natural peanut butter

                     in a food processor or blender until smooth

 

           Add:  1/2 cup ground pecans or hazelnuts

                     (Make as fine or crunchy as you like.

                      Almonds work well too.)

           Mix well and roll into balls or scoop with melon baller.

 

           Melt 1/2 cup carob chips or dark chocolate chips

                    in a double boiler (carob ships may need added oil)

       

           Dip balls in carob or chocolate, or paint them with a

                   paint brush.

 

           Refrigerate for 30 minutes and enjoy!

 

           Makes 12-16

 

             Need something quicker?

          Try melting 1/2 cup peanut butter and one Tablespoon agave

             mix in Cheerios or puffed millet

             you can mix in nuts you like also    

          Drop spoonfuls into muffin tin or cupcake papers    

             Refrigerate for 15 minutes and enjoy!  

Mrs. Owl's Peanut Butter Treats

              Scrumptious Sugar-free Apple Pie

      

 Healthy Crust:

        1c. oat flour    + 1 c. white or ww. pastry flour                                                                                                                          

                     2/3 c. Earth Balance + 2 T coconut oil

                     1/4 tsp sea salt

       Blend with pastry blender til crumbly

       Knead a few times and divide in half

       Roll 1/4 in thick and press into pie pan. This

             you may want to roll between waxed paper

       Filling: Peel and slice 4 -5 apples

       Shake cinnamon over (aprox. 1/2 tsp.)

       Place scant 1/2 tsp Sweet Leaf Stevia

            English Toffee flavor in 2 Tbsp. of olive

            or grapesee oil. Mix well, pour over

            apples & mix to distribute. Roll top and

            place on apples and crimp with bottom.

       Bake at 400 for one hour. (Foil cover edges)
